Students Collaborate on Faculty-Led Nutrition Study

Every year, students and faculty at the College of Health and Human Development join forces to investigate some of today’s most pressing health questions: What are the long-term effects of cyberbullying on adolescents? How does stress management and resilience training positively impact at-risk children?

Health Science major Siena Morgan is one of four students working with assistant professor Pimbucha Rusmevichientong on a new study designed to better understand how food labeling affects college students’ purchasing decisions. Morgan will help measure how well students understand nutrition facts and other food labels.

Why Health Science?

I decided to major in Health Science because I have always been passionate about health promotion and health in general. Growing up, I wanted to be a nurse but as I volunteered and gained experience, I realized it wasn’t for me. I still wanted to work in healthcare and public health caught my eye. It is a better fit for me.

What inspired you to participate in Dr. Pim's research project?

Dr. Pim mentioned her research in class one day. I haven’t participated in a research before but it sounded interesting so asked if I could get involved. She talked about studying food labels and I knew for sure I wanted to be a part of the project. I am very passionate about nutrition so it is the perfect fit for me.

How do you anticipate your role in this project will help you achieve your educational goals?

Working with Dr. Pim, I’ve learned how research works and I’ve gained a better understanding of statistics. I’m excited to apply my knowledge to our research data. I’m currently enrolled in a program planning class where I’m learning to write grant proposals and a health promotion program for a specific community. I can correlate that class to my research with Dr. Pim. I can use my experiences in research to understand how the whole process works. I hope to be a registered dietitian, so Dr. Pim’s food labeling research benefits me tremendously.

What do you hope to do after graduation?

After I graduate, I plan on attending San Diego State where I will finish up a few courses to apply to a MS Nutrition program. I hope to then work in the field of dietetics but am very open to whatever doors open up for me.
